If there is a lot of green growing in the garden in summer, it is quick and easy to prepare. The pesto goes well with pasta, potatoes or rice.
You need for 2 servings:
- 1 handful of herbs (basil, nasturtium, goutweed, nettle)
- 4 tablespoons nuts or seeds
- 1 tsp matchatto powder
- olive oil
- salt and pepper
- some lemon juice
Here's how you do it:
Put all the ingredients in your blender and chop everything. I like it when the nuts are still "chunky". Then add olive oil until you get the consistency you want.
And your green pesto is ready.
Did you know that you can also use carrot, kohlrabi or radish leaves? These too are at least as healthy as the tubers.
